CREAMY CLAM CHOWDER

Date: June 2, 2015

INGREDIENTS:
2 1/2 Cups boiling water
1 Quart chopped clams
1 Cup clam juice
2 Cans evaporated milk
3-4 Slices of chopped bacon
4 Tablespoons butter
1 Chopped onion
3 Cups cubed potatoes
1 Can whole kernel corn
Flour
Salt
Pepper

PREPARATION: In a deep pan, brown bacon until crisp, remove and set to one side. Saute chopped onion until golden. Layer potatoes, clams and corn, dredging each layer with salt, pepper and flour. Add boiling water and simmer until potatoes are tender. Add milk and butter. Thicken clam juice with 1 tbsp. butter and 1 tbsp. flour and add to soup just prior to serving. Ladle into bowls and sprinkle with bacon crisps.
